This long-established Hatcho miso maker has a history of over 600 years, and still carries on the Hatcho miso-making method that has been preserved since the company's founding. Using only soybeans and salt as ingredients, they maintain their unique method of making miso in wooden barrels weighted down with stone in a natural environment for two summers and two winters.
The Hatcho miso made here has a unique acidity and richness, and is an essential seasoning when cooking authentic Japanese cuisine, loved by professional Japanese chefs both in Japan and overseas.
