A special experience to learn about authentic fermentation culture
Experience the long history and food culture of "Hatcho Miso," a special fermented food created by order of Shogun Tokugawa Ieyasu.
This is a special experience event.
What is Hatcho Miso?
- Hatcho miso is a portable meal devised by Shogun Tokugawa Ieyasu as rations for soldiers on expeditions, and it is a nutritious health food
- It was named "Hatcho Miso" because it was made in Hatcho Village, eight cho (approximately 800 meters) west of Okazaki Castle, the residence of Tokugawa Ieyasu.
- It is still made using the same recipe as in the past, with only soybeans, salt, and water, and fermented in wooden barrels stacked with stones for "two summers and two winters."


Tour the treasured Hatcho Miso storehouse
- Hatcho miso is fermented using beneficial bacteria such as lactic acid bacteria and koji mold
- The miso brewery is managed with the utmost care to prevent contamination by other bacteria
- The private miso storage facility is not open to the public.

Cooking practice using Hatcho miso
- Participants will create unique condiments using Hatcho Miso with their own hands.
- Mr. Asai, the president of Maruya, will directly teach how to make the optimal condiment tailored to the menu of the dining event.
- The condiments created here will be actually tasted during the subsequent dining event.

Zen by Japanese candlelight
- Japan’s most historic Japanese candles from Okazaki City.
- Japanese candles are wind-resistant, so they shine reliably outdoors
- Strong light and gentle flickering make it perfect for Zen meditation


Miso French cuisine and food pairing experience
- Using the seasonings we made in practical training, we will confirm that Hatcho miso is the best secret ingredient for French cuisine
- There is a very good combination between miso French cuisine and sake
- Experience the finest French cuisine and the finest sake with your whole body amid the flickering Japanese candles
